They can stand up to being cooked twice: once in the factory, where they are cooked, arranged into little nests with seasonings and toppings, packaged up, and frozen, and once in the microwave, where four minutes gives the office dweller a hot bowl of noodles. Ramen soup is traditionally made of two components: a broth using seaweed, dried mushrooms, fish, or meat, and a pungently salty flavouring, like miso or soy sauce. Dashi is usually made with dried kelp (kombu), bonito fish flakes (katsuobushi) or a combination of the two. When building flavour during the cooking process, there's a scientific reason why certain combinations and pairings in ramen taste so delicious," says Sasaki.

Sauce Base: Soy Sauce (Water, Wheat Flour, Soybean, Salt), Water Onion, Carrot, King Oyster Mushroom, Cabbage, Salt, Sugar, Olive Oil, Tomato Paste, Chinese Soy Sauce (Water, Soybean, Salt, Sugar, Wheat Flour), Sake, Bamboo Shoot Powder, Kelp Powder, Thickener: Guar Gum, Sugarcane, Vinegar, Black Pepper Powder. Behind the slab of dry noodles and small flavor packets is a team of culinary scientists that worked on getting that umami just right. Please always read the ingredients, labels, warnings, and directions provided with the product before using or consuming a product. While frozen and instant ramen have their unhealthy yet delicious nature in common, that’s where many of the similarities stop, as these are very different experiences. It wasn’t until 1973 that industry legend Nissin, the same company that invented the instant ramen and cup noodle, started freezing pre-cooked noodles with a patent that was approved in 1982. When you combine kombu [seaweed] or MSG, which contain glutamate, plus meat, which contains inosinate, and dried shitake mushrooms, which contain guanylate, each part interacts with each other to intensify the flavour. To withstand the extreme handling of high to low to high temperatures, the noodle dough and by extension, the noodles themselves are made very compact.

The cooking time for frozen ramen noodles can vary depending on the brand and thickness of the noodles. Frozen Ramen may seem simple, you just make a bowl of ramen, freeze it and voilà, your future meal is ready, right? An added danger to the noodles' integrity, Sasaki adds, is that while Japanese eaters slurp piping-hot noodles very quickly, not everyone is so fast. After WWII, Japan faced food shortages and Momofuku Ando addressed the demand for noodles by inventing instant noodles in 1958. Frozen noodles often have fewer preservatives and artificial ingredients compared to their instant counterparts. Adding baking soda to change the alkalinity of the cooking water has never meaningfully changed the texture either.

We have a monthly subscription box filled with 7 types of Japanese noodles you’ve likely never heard of, and they change every month as we provide seasonal products, many of which have just been released in Japan as well. Because they’re not attempting to replicate a restaurant experience, you're guaranteed a different experience that delivered on its promises.

Authentic ramen noodles are usually made of four basic ingredients: wheat flour, salt, water and Kansui. Rinse them briefly under cold water to halt the cooking process and prevent them from becoming mushy. Pour in the hot water to the line on the bowl and close the lid, put any sauce packs on top to keep it closed and heat up the sauce.
